Baking with Bebe

One of Will's favorite things to do is BAKE. I've been including him in the kitchen since he was really little, and now when he sees me doing something in there, he begs to help. 👩‍👦 @themidwestskinny introduced me to the book #bringingupbebe when I was pregnant with him and it was so helpful for showing me how to be a laid back mom and not sweat the small stuff...like messes...and mistakes...and even more messes. . One of the chapters in the book is about baking with your baby/bebe ☺️, and it resonated with me about how it is such a great learning experience for kids. This week we baked up some blueberry oatmeal cups to include in snacks or breakfast on the go. • 3 mashed bananas 🍌 • 1 cup unsweetened vanilla almond milk (we use @bluediamond) • 2 eggs 🥚 • 1 tbsp baking powder • 3 cups old fashion or rolled oats • 1 tsp vanilla extract • 2 tbsp flax meal (optional) • 2 tbsp chia seeds (optional) • 3/4 cup blueberries (fresh or frozen) Mix together, spray muffin cup liners with oil, pour in the batter, and bake on 375 for 25 minutes. Store them in the fridge for the next few days. . I serve these to the babies with a couple of eggs 🍳before heading to school! 💙❤️
